Aloo Paratha Recipe

Aloo Parathas are my favorite… Give it to me anytime, and I am ready for it!! Recently, I had been to Rampy’s, a small restaurant in Bangalore.The restaurant is quite famous for the different varities of rolls (both veg and non-veg) they offer.Their aloo parathas tasted great and the first thing I did after emptying the plate was to follow them to their kitchen. I had never tried my hands on aloo parathas and this prompted me even more to learn it.

I had first tasted aloo parathas way back in my childhood when my neighbor-aunt gave it to me. But somehow, I never felt like trying it out. Might be because of the complexity involved in it. But now, after i finally learnt it, cooking aloo parathas is as much enjoyable as eating them!! I aloo-paranthathought of writing this recipe on my blog when I tried cooking aloo parathas for the first time after learning it from the chef at Rampy’s ;) . The outcome was a decent aloo paratha which was shaped like an amoeba!! The later trials proved to be good and it improved from one try to another. Now, my aloo parathas are the best tasting and even better looking than the Rampy’s ones!! :) I would like to dedicate this page to the Rampy’s chef,  my teacher :) .

So guys, lets join hands and cook this wonderful dish!! It may not come out perfectly in the first attempt. But don’t lose heart… Keep trying, and I am sure you will make it one day!! (maximum of 3 attempts ;) )

Aloo Paratha-Ingredients:

  • Potatoes: 5 large
  • Amchur powder (optional): 2-3 pinches
  • Turmeric powder: 3-4 pinches
  • Coriander/Dhaniya powder: 1/4(quarter) tea spoon
  • Garam Masala powder: 1/4(quarter) tea spoon
  • Ginger and garlic paste: 1/2 tea spoon
  • Coriander: 1/4(quarter) of a bunch chopped
  • Lime Juice: 3 tbl spoon
  • Salt: to taste
  • Chilly powder: to taste

For the Tempering:

  • Cumin/Jeera seeds: 1/2 tea spoon
  • Curry leaves: 5-6
  • Green chillies: 4 finely chopped

For the Dough:

  • Maida: 2 cups
  • Wheat flour: 3/4 of a cup
  • Unsalted butter: 2 tbl spoon
  • Warm water: 1 cup


Preparing Aloo Paratha:

  1. Peel, boil and mash the potatoes.
  2. Add dhaniya powder, garam masala powder, amchur powder (optional, if you like its tangy taste),lime juice, ginger-garlic paste, salt, chilly powder, turmeric powder and coriander to the mashed potato mixture and knead well.
  3. Heat 2 tbs oil in a kadai.
  4. Add cumin seeds and allow them to splutter.
  5. Add chopped curry leaves and finely chopped green chillies.
  6. Add the mashed potato mixture, mix well and continue to cook until the sides of the potato mixture begin to turn brown slightly.
  7. Be careful not to burn the mixture or over cook it. The mixture should just brown lightly at the bottom and the sides. Keep the mixture aside.
  8. In a large mixing bowl, combine both the flours. Add melted butter and warm water and knead the flour well. It should form a soft and supple ball. Add more water/flour if required.
  9. Now, divide the dough into small lemon sized balls.
  10. With the help of a rolling-pin, flatten a ball into a disc shape.
  11. Take a smaller sized ball of the mashed potato mixture and place it at the center of this flour disc.
  12. Cover the potato mixture from all sides with the disc.
  13. Remove excess dough if any & flatten this newly made ball into the shape of a medium sized disc with the help of a rolling pin.
  14. If you feel that the dough is sticking to the rolling pin, then sprinkle some more wheat flour or maida & continue rolling.
  15. Repeat procedure with the remaining potato mixture and the dough.
  16. Pan fry each paratha until golden brown. You may also smear a little butter on each side when frying.
  17. Aloo Parathas are ready!!
  18. Serve them hot with any pickle or some ketchup.

Here are the tasty, tangy aloo parathas that you can enjoy with your family. But the only sad part is that you cannot eat more than two of these. Two parathas completely fill your stomach and even though you want more of it, you cant eat :(   But otherwise, its a great meal!! Just smear a little butter on it and go on a munching spree!!
