Serves – 4 to 6 people

Ingredients :

1. Basmati rice/jasmine rice or any other long rice – 2 cups
2. Water or chicken broth – 2 ½ cups
3. Fried garlic or shallot – 1 tbsp. and (1tbsp. for garnish)
4. Canola oil or garlic oil – 1 tbsp.
5. Curry powder – 2 tbsp.
6. Lemongrass powder – 2 tbsp.
7. Ginger powder – ½ tbsp. (optional)
8. 1 bay leaf
9. Fried or baked chicken – 6 pieces

Method for preparing delicious Phuket chicken recipe:

Rinse the rice and drain excess water. Put the rice in a cooker along with water, fried garlic, curry powder, canola oil, lemongrass powder, ginger powder, and bay leaf. Mix all the ingredients well and place the cooked chicken in the center of the cooker. Cover the lid and turn on the rice cooker. It takes around thirty minutes to cook this recipe. Let the food sit for another 15 to 20 minutes before serving.
