- 125 gms Self-raising Maida or All-Purpose Flour
- 125 gms Brown Sugar
- 125 gms Unsalted butterat room temperature
- 250 gms Dried Mix FruitsRaisins, Glace Cherries, dried cranberries, cashew nuts, almonds, dried apricots, dried figs, dates
- 1 tsp Dried Ginger powder
- 1/3 cup Orange Juice
- 1 tsp Vanilla extract or Vanilla Essence

Out of the entire flour quantity, take 2 tbsp of flour and rub nicely on the Dried mix fruits. This is to ensure that the nuts do not sink in the bottom while baking.
Pre-heat the oven on 180 degree Celsius for about 15 minutes.
In a bowl, combine unsalted butter and sugar, whisk it for at least 5-7 minutes. You can use an electric whisker.
Now, add the Vanilla extract and whisk for another 3-4 minutes.
Add the Orange Juice in this mixture and mix well. Now, add the flour mixing it well with the spoon.
Whisk this mixture for only 2 minutes. Now, add the dried mixed fruits and mix well with a spoon.
Grease a 7 inches round baking tin. Place this mixture in this greased tin.
Bake it for about 30-40 minutes in the pre-heated oven. Insert a toothpick and see if it comes out clean. Otherwise, bake it for another 10 minutes.
Once it is done, let it cool for another 45 minutes.
After the cake is completely cool, cut into pieces and serve.
