- 1 tbsp Pure Ghee
- 2 tbsp Raw Peanuts
- 1 cup Kuttu or Buckwheat
- 1 tsp Green ChilliesFinely Chopped
- 1.5 tsp Ginger Grated
- 1/2 tsp Sugar
- 1/2 tsp Cumin Seeds
- 1 Potato1 Large Potato cut in cubes
- 2 cups Water
- As per Taste Sendha Namak
- 1/2 tsp Lemon JuiceOptional
Kuttu Ki Khichdi (Buckwheat Khichdi) is very useful in weight loss as well as it is used in fasting.
Dry roast the peanuts until the skin starts coming out and they turn golden in colour. Let it cool completely. Once the peanuts are cool, then grind them into a coarse powder.
Rinse the kuttu for a few times and keep it aside.
Method of making the Khicdi:
Heat the ghee in a pan. Once it reaches the smoking point, add cumin seeds. Once cumin seeds start crackling, add green chillies and ginger. Saute them for a few seconds until the raw smell goes off.
Add the potatoes and saute them adding a little sendha namak. Once the potatoes start becoming a little crisp and brown from around the edges. Once they are cooked a little, add the peanuts coarse powder.
Cook it for 3 minutes. Now add Kuttu, water, sendha namak to taste and sugar.
Cover the pan and let it cook until all the water is absorbed. Check the buckwheat, it should be cooked and soft.
Now add the lemon juice and mix well.
Serve it hot with curds and a dalop of ghee.
