For the Masala
Heat oil in a pan. As it reaches smoking point, add mustard seeds and let them crackle.
Add green chilies, grated ginger and garlic paste. Saute this for 2-3 minutes on medium flame until all the rawness goes away.
It is time to add the mashed potatoes, grated carrots, peas and all the remaining ingredients of the Masala.
Mix it very well and let it cook for about a minute.
Switch off the flame and keep the masala aside.
How to Proceed:
Apply some butter on one side of all the bread slices. On the same side, apply some Green Chutney and keep it aside.
Take one slice and on the side where butter and Chutney are applied, place some prepared masala evenly. On top of it, place some onion slices and finely chopped capsicum.
Now, sprinkle some chat masala and place another slice of butter and chutney facing downside.
Likewise prepare the remaining 3 pairs of sandwiches.
Heat a Sandwich toaster. Apply butter on top of the sandwiches and let it toast until the bread turn brown and toasty.
