Ingredients

1 1/4 cup Maida or All-Purpose Flour
1/2 cup Brown Sugar
1/2 cup Granulated Sugar
1/2 cup Softened Butter
1 Large Egg
1/2 cup Peanut Butter
1 1/2 tsp Vanilla Extract
3/4 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt
1 cup Rolled Oats
1/2 cup Unsalted Roasted Peanuts

    Line a baking tray with parchment paper and keep it aside.

    Take a large bowl and add Brown sugar, granulated sugar, softened butter and peanut butter. Now beat this mixture until it is soft and fluffy.

    Next, combine the egg and Vanilla extract and beat it until the mixture is very well combined.

    In another bowl, shift together the flour, baking soda and baking powder. Add this flour mixture to the butter mixture. Add the rolled oats and roasted unsalted peanuts.

    Cover with a plastic cling wrap and refrigerate it for 2 hours.

    Remove the mixture and using a scooper, take one scoop and place it on the lined baking tray. Place all the cookies this way leaving a gap of 2-3 inches in between them.

    Flatten each cookie slightly with your hands.

    Preheat the oven at 190 degree Celsius for about 10 minutes.

    Place the ready baking tray into the preheated oven and let the cookies bake for about 9-10 minutes or until they are golden brown.

    Once done, let these cookies cool on the baking sheets. After they are cool, transfer them to wire racks to cool completely.

    After they are cool completely, you can store them in air-tight containers for 2 weeks.
