Ingredients

Adjust Servings:
2.5 cups Red Pumpkin
cubed into small pieces
1/2 cup Potato
cubed into small pieces
1 cup Spring Onions
chopped
2 tbsp Ginger and garlic
chopped roughly
1 tsp Dried Mixed Herbs
3 tbsp Butter
1.5 tsp Black pepper powder
2 tbsp Mint
roughly chopped
Salt to taste
1.5 cup Milk

Pumpkin Soup – Roman Style

Who said Pumpkin is a difficult vegetable to cook with? Well, here is a simple soup recipe which brings in the sweetness of the Pumpkin coupled with the freshness of mint and other herbs.

    In a deep pan, melt the butter. Add the roughly chopped ginger and garlic, saute it for about 2-3 minutes on medium flame.

    Add chopped spring onions and cook for a minute and then add potatoes as well as pumpkin cubes. Cook for about 3-4 minutes until the potatoes turn a little soft.

    Add the milk with equal quantity of hot water. Cover and cook until the potatoes and pumpkin are tender.

    Now is the time to add the mixed herbs, salt and black pepper powder. Mix well. Take a boil.

    Switch off the flame and cool the mixture completely. Once cool, puree it in a blender.

    In another pan, add this puree and 1 1/2 cups of boiling water. Let it boil on a slow flame for 3-4 minutes.

    Taste and adjust the seasoning accordingly. Once done, switch off the flame.

    Garnish it with finely chopped mint leaves and serve hot.
