300 grams Fresh Strawberries

1.5 cups Organic Powdered Jaggery or Sugar

1 1/4 tbsp Lemon Juice

Wash and rinse the strawberries well. Chop them finely. Remove the upper green part. Don’t use them.

Roughly puree the strawberries. Don’t make them into a paste. Let there be chunks in it.

In a heavy bottom pan, pour the pureed strawberries and the Jaggery powder or sugar. Keep the flame medium to slow.

The strawberries will start leaving their juices and begin cooking. Ensure to stir at regular intervals to prevent any kind of sticking at the bottom of the pan.

Soon you will see that this mixture is reducing. At this point, add the lemon juice so that all the dirt particles of sugar are separated. It will be whitish color foam. Remove it with the help of a spoon.

It should take you about 25 minutes to get a jam like consistency. Once the jam starts leaving the sides of the pan, it means it’s ready.

Once this is done, switch off the flame and let it cool down. You may cover the pan with a clean kitchen towel and let it cool.

After it is completely cool, you can transfer this mixture into a sterilized glass jar.
