In a non-stick pan, combine sugar and water. Let them dissolve on a high flame. Keep stirring continuously for approximately 8-9 minutes until there is a one string consistency.
Lower the flame to slow and add the Kaju Powder. Keep stirring it to ensure there are no lumps formed.
At this stage when everything is combined well, you may add the cardamom powder.
Keep stirring it continuously until the mixture starts resembling a dough.
It will start leaving the sides of the pan. At the time, add the ghee and give it a nice mix. Cook further for 2 minutes on slow flame only.
Switch off the flame and grease a huge plate as well as your hands with ghee.
Transfer the mixture onto this plate. Now, knead this dough for about a minute.
Now, grease a butter paper and spread the dough on it and using a rolling pin spread it evenly as well as adjust the thickness evenly.
Cut it into diamond shape or another shape you like.
You can store this Kaju Katli for a week in an air-tight container.
